Savory Zucchini Pancakes

An easy way to incorporate a serving of vegetables into breakfast!
Ingredients
- 1 cup flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 eggs, separated
- 1 cup buttermilk
- 1 tbsp honey
- 2 tbsp melted butter
- 1 cup coarsely shredded zucchini
- 2 tbsp flaxmeal
Instructions
- Whisk the flour, baking soda, and salt together in a mixing bowl. Beat the egg yolks.
- Add the egg yolks and buttermilk to the dry ingredients in the bowl and stir until just combined. Add the honey, melted butter, zucchini, and flaxmeal. Stir to combine.
- Vigorously whisk the egg whites and fold them into the batter.
- Heat a griddle to medium heat on stove top or 400 degrees on electric griddle.
- Pour the batter onto the hot griddle and wait until bubbles form on the top of the pancakes and the edges look dry, 3-4 minutes. Flip once, cook for another 3 minutes, and remove from heat.
- Top the pancakes with your choice of topping.
