Tex-Mex Chicken and Rice



Tex-Mex Chicken and Rice

Serves: 1

5 minute meal. Makes one serving, but can be multiplied and meal prepped.
  • 8 oz chicken breast, pre-grilled and cubed
  • 1 cup brown rice, cooked
  • ½ cup frozen peas and carrots
  • 1 stalk celery, chopped
  • ½ medium red bell pepper, chopped
  • 2 tbsp barbecue sauce
  • 2 tbsp guacamole
  1. Stir all ingredients, except the guacamole, together in a pot on a medium-low heat, until everything is warm (It can also be nuked for a couple minutes).
  2. Top with guacamole.
