Tex-Mex Chicken and Rice
Serves: 1
5 minute meal. Makes one serving, but can be multiplied and meal prepped.
Ingredients
- 8 oz chicken breast, pre-grilled and cubed
- 1 cup brown rice, cooked
- ½ cup frozen peas and carrots
- 1 stalk celery, chopped
- ½ medium red bell pepper, chopped
- 2 tbsp barbecue sauce
- 2 tbsp guacamole
Directions
- Stir all ingredients, except the guacamole, together in a pot on a medium-low heat, until everything is warm (It can also be nuked for a couple minutes).
- Top with guacamole.
