Spicy Eggs & Oats Scramble
Serves: 1
Ingredients
- 1 egg
- 4 egg whites
- ½ cup oats
- ¼ tsp dried basil or 1 tbsp fresh
- Pinch of black ground pepper
- ⅓ cup chopped tomatoes
- ⅓ cup chopped fresh baby spinach (about 10 leaves)
- 1 tsp finely chopped onion
- 1 tsp grated Parmesan cheese
- Dash of hot-pepper sauce
Directions
- In a bowl, whisk together the egg and egg whites until frothy
- Add the oats, basil, and pepper. Allow to soak for 3 minutes
- Coat a skillet with cooking spray, then wipe away excess spray with a paper towel. Heat the skillet over medium heat
- Add the egg mixture and cook for 30 seconds
- Add the tomatoes, spinach, and onion. Cook, stirring, for 3 to 4 minutes, or until the eggs are firm
- Remove to a plate and top with the cheese and hot-pepper sauce
