Ginger Chicken and Vegetables

Serves: 4 servings

Chicken with a zing! If you like chicken and vegetables you'll love this take on it. The hint of ginger really brings together the flavors this dish offers. And, it includes your daily serving of vegetables in a fun, fresh way for those picky eaters. Additionally, you cook rice while the main dish simmers and plate it first using it as a bed for the chicken and vegetables.
  • ¼ c olive oil mixture
  • 2 cloves garlic, minced
  • ½ red onion, sliced
  • 1 tsp powdered ginger
  • 2 c cooked chicken breast meat, skinless and diced
  • 1 c chicken broth (no salt)
  • ½ c celery, chopped
  • 1 c carrot, sliced thin
  • ½ bell pepper, sliced
  1. Heat oil in a heavy skillet over medium heat.
  2. Prepare ingredients.
  3. Sautee minced garlic and sliced onions in skillet.
  4. Then add ginger, chicken, chicken broth, celery, carrot, and pepper to skillet with onions and garlic.
  5. Simmer the dish until vegetables are tender.
