Easy Western Omelet

Ingredients
  • 1 egg
  • 5 egg whites
  • 3 tbsp water or fat-free milk
  • 1 tbsp finely chopped onion
  • 1 tbsp finely chopped red bell pepper
  • 4 white mushrooms, sliced
  • Pinch of ground black pepper
  • 1 tsp grated Parmesan cheese
Instructions
  1. In a bowl, whisk together the egg, egg whites, and water or milk.
  2. Coat a skillet with cooking spray and heat over medium heat. Add the onion, bell pepper, mushrooms, and black pepper. Cook for 1 minute. Reduce the heat to medium-low.
  3. Add the egg mixture. Cook, stirring, until the egg mixture begins to set. Cook without stirring for 2 minutes, or until the eggs start to look firm. Flip the omelet.
  4. Add the cheese and fold the omelet in half. Cook for 30 seconds. Flip and cook for 30 seconds longer.
