Cauliflower Crust Pizza

Top this pizza with spinach, mushrooms, peppers, tomatoes, or onions!
Ingredients
- 2 ½ cups grated or ground cauliflower (use a food processor or cheese grater)
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon garlic powder
- ¼ cup shredded Parmesan cheese
- ¼ cup mozzarella cheese
- kosher salt
- 1 egg, slightly beaten
Instructions
- Preheat oven to 425F.
- Shred cauliflower with a cheese grater or in a food processor until fine like breadcrumbs.
- Place cauliflower in a heat-safe bowl and cover with plastic wrap with a few holes to vent. Microwave for 4 minutes, remove plastic, and stir to cool until slightly warm.
- Place cauliflower in cheese cloth and squeeze until liquid is out. You could also use a fine mesh strainer and rubber spatula to expel any liquid.
- Then place cauliflower in a bowl and fluff with a fork. Add basil, oregano, garlic, Parmesan, and mozzarella. Mix well. Add pinch of salt to taste. Last, add egg and stir with fork to blend completely.
- On a baking sheet lined with parchment paper and sprayed with cooking spray, form pizza rounds with the mixture (either one large pizza or several small ones). Your rounds should be be ¼ to ½ inch thick. Keep mixture even throughout and tight together.
- Cook the crust first by placing pan in oven and bake until golden brown, 15-20 with slight browning on top. Then remove from over, add toppings and return to oven for 2-4 minutes to melt cheese and warm toppings.
- Let rest to cool down. Then slice and serve.
