Basic Granola Energy Mix

A great recipe for energy and adding a crunch to your yogurt and day. Try multiplying by 2 to make enough for the week, especially since large quantities are usually available at the store.
Ingredients
  • 2.5 cups oats
  • 1/2 cup unsalted roasted almonds
  • 1/2 cup pecans
  • 1/2 cup toasted wheat germ
  • 1/2 cup (or 1 4 oz container) unsweetened applesauce
  • 1/4 cup warm water
  • 3 tbsp whole flaxseeds
  • 2 tbsp brown sugar
  • 1 tbsp molasses
  • 1/2 tsp ground cinnamon
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp ground nutmeg
  • 1/4 dried pineapple chunks
  • 1/4 dried cherries
  • 2 tbsp shredded coconut
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix together all the ingredients, except the pineapple, cherries, and coconut.
  3. Coat a large baking pan with cooking spray. Add the mixture and spread it from edge to edge to create an even layer.
  4. Bake for 90 minutes, stirring every 15 minutes until all the granola is browned and crunchy.
  5. Remove from oven and allow to cool completely.
  6. Add the pineapple, cherries, and coconut. Stir to mix.
