Basic Granola Energy Mix

A great recipe for energy and adding a crunch to your yogurt and day. Try multiplying by 2 to make enough for the week, especially since large quantities are usually available at the store.
Ingredients
- 2.5 cups oats
- 1/2 cup unsalted roasted almonds
- 1/2 cup pecans
- 1/2 cup toasted wheat germ
- 1/2 cup (or 1 4 oz container) unsweetened applesauce
- 1/4 cup warm water
- 3 tbsp whole flaxseeds
- 2 tbsp brown sugar
- 1 tbsp molasses
- 1/2 tsp ground cinnamon
- 1/2 tsp pure vanilla extract
- 1/4 tsp ground nutmeg
- 1/4 dried pineapple chunks
- 1/4 dried cherries
- 2 tbsp shredded coconut
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together all the ingredients, except the pineapple, cherries, and coconut.
- Coat a large baking pan with cooking spray. Add the mixture and spread it from edge to edge to create an even layer.
- Bake for 90 minutes, stirring every 15 minutes until all the granola is browned and crunchy.
- Remove from oven and allow to cool completely.
- Add the pineapple, cherries, and coconut. Stir to mix.
