Savory Zucchini Pancakes
An easy way to incorporate a serving of vegetables into breakfast!
Serves: 4 servings
  • 1 cup flour
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 2 eggs, separated
  • 1 cup buttermilk
  • 1 tbsp honey
  • 2 tbsp melted butter
  • 1 cup coarsely shredded zucchini
  • 2 tbsp flaxmeal
  1. Whisk the flour, baking soda, and salt together in a mixing bowl. Beat the egg yolks.
  2. Add the egg yolks and buttermilk to the dry ingredients in the bowl and stir until just combined. Add the honey, melted butter, zucchini, and flaxmeal. Stir to combine.
  3. Vigorously whisk the egg whites and fold them into the batter.
  4. Heat a griddle to medium heat on stove top or 400 degrees on electric griddle.
  5. Pour the batter onto the hot griddle and wait until bubbles form on the top of the pancakes and the edges look dry, 3-4 minutes. Flip once, cook for another 3 minutes, and remove from heat.
  6. Top the pancakes with your choice of topping.
